Turnip Dhal (Vegan & GF)

1 Cup red lentils
1 large or 2 small turnips, peeled and diced
1 medium onion, diced
2 garlic cloves, minced
1 can chopped tomatoes
1 can chickpeas
1 can green lentils
Frozen spinach
Frozen peas
1 1/2 tbsp curry powder
2 C water or vegetable stock
1/2 can full-fat coconut milk
1/2 tsp Garam Masala
salt to taste
oil for cooking
Petunjuk
Heat oil in a large shallow pan over medium heat. Sauté onion and garlic until soft and translucent. Add curry powder and stir for a minute until fragrant.
Now add diced turnip and chopped tomatoes. Let it cook for about 5 minutes.
Then add lentils, water or vegetable stock and let it simmer partially covered for 10-15 minutes or until lentils are done.
Add chickpeas and green lentils and frozen spinach for 5 minutes.
When lentils are soft add coconut milk, salt and Garam Masala. Stir well and cook for another 5 minutes to thicken. Add frozen peas in last 2-3 minutes.
Serve over rice or quinoa or alongside fresh flatbread like Naan.
