Ad Chilli Garlic Butter Spaghetti + Chicken

140g spaghetti
2 chicken breasts
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp garlic granules
30g Lurpak Chilli & Garlic
2 garlic cloves, finely grated or crushed
Zest of 1 lemon
Juice of 1/2 lemon
30g parmesan, finely grated, plus extra to serve
Optional pinch chilli flakes
For the salad: rocket, olive oil, balsamic vinegar

Bring a large pan of heavily salted water to the boil and cook the spaghetti until al dente. Reserve a mug of pasta water when you drain.
Meanwhile, butterfly or smash the chicken breasts so they cook more evenly. Season with salt, pepper, smoked paprika, garlic granules and oregano.
Heat a griddle pan or frying pan over a medium-high heat with a little olive oil. Cook the chicken for around 5-6 minutes per side until golden and cooked through. On the final side, cut a knob of Lurpak’s Chilli & Garlic into the pan and baste the breasts. Set aside to rest and pour over the juices.
Turn the heat right down. Add another little bit of Lurpak Chilli & Garlic to the same pan. Once melted, stir through the garlic, lemon zest and lemon juice and cook for 30 seconds until fragrant.
Transfer the cooked spaghetti straight into the pan along with the parmesan, lots of black pepper, a pinch of chilli flakes (if using) and a splash of pasta water. Toss everything together until glossy and silky.
In a bowl, toss the rocket with a drizzle of olive oil, balsamic vinegar and a pinch of salt.
Slice the chicken and serve over the spaghetti with extra parmesan, black pepper and the rocket salad alongside.
