Wild Garlic Soup

50g butter 1 onion, thinly sliced 1 potato, peeled and chopped into 1cm cubes 1.1l vegetable stock 250g wild garlic 150ml double cream
Petunjuk
1 Melt the butter in a large saucepan over a medium heat until it is foaming, then add the onion and cook for 3-4 minutes until it is softened but not coloured.
2 Add the potato and stock. Cover and simmer for 10-12 minutes until tender.
3 Stir in the wild garlic for 30 seconds until the leaves are wilted.
4 Use a stick blender to puree the soup until it is smooth. Pass it through a fine sleve to remove any extra lumps.
5 To preserve the vibrant green colour of the soup, place large chunks of Ice into a bowl and pour in the soup. When chilled, strain the soup again, discarding the ice.
6 Heat through in a saucepan over a low heat and stir in the cream before serving.
