Moukes Frittes With Pesto

4 medium potatoes, cut into lhcm-

thick chips

4 garlic cloves, crushed

2 tbsp olive oil

Salt and black pepper

250mI white wine

1 kg mussels, scrubbed and debearded

6 tbsp fresh basil pesto

To serve:

Lemon wedges

1 Preheat the oven to 220°C/200°C fan/ gas mark 7.

2 On a rimmed baking tray, toss the potatoes with the garlic, olive oil and some salt and pepper. Roast for 30-40 minutes until golden brown and crisp, turning once.

3 When the potatoes have five minutes left to cook, bring the wine to a boil in a large pot. Turn the heat to a simmer and stir in the pesto.

4 Add the mussels and cover with a lid. Simmer for 3-4 minutes until all of the mussels have opened, gently tossing with a slotted spoon halfway through.

5 Divide the mussels amongst four bowls, ladling over the pesto sauce, and serve with the oven chips.
