Green Goddess Dip

1 ounce fresh dill

½ ounce fresh mint leaves

1 ounce fresh parsley

3 scallions, white and green parts

4 garlic cloves

1 ounce fresh basil

1½ tablespoons freshly squeezed lemon juice

⅓ cup olive oil

½ cup plain Greek yogurt

2½ ounces feta cheese

1. In a food processor, combine the dill, mint, parsley, scallions, garlic, basil, lemon juice, olive oil, yogurt, and feta and blend until creamy.

2. Taste the mix and add salt if needed. Depending on the feta used, the dip might already be salty enough. If salt is added, mix for another 10 to 15 seconds.

3. Pour the dip into a serving bowl and serve right away with your favorite veggies and pita chips, or keep in the fridge for up to 4 days.
