10 oz orecchiette or campanelle

1 cup crumbled feta

1/2 cup red onion, finely diced

2 cups arugula, roughly chopped

1 can of chickpeas, drained and rinsed

1 cucumber, diced small

1/4 cup grated pecorino

Pasta salad dressing

1/2 cup olive oil

3 tbsp red wine vinegar

juice and zest of 1 lemon

1 tbsp honey

1 garlic clove, grated

1 tbsp water

salt, pepper, crushed red pepper flakes

Yogurt herb chicken

8 boneless skinless chicken thighs

3/4 cup plain Greek yogurt

1/3 cup olive oil

2 tbsp parsley, finely chopped

2 tbsp green onions, finely chopped

1 tbsp shallot or red onion, finely chopped

3 garlic cloves, grated

1 tbsp honey

zest and juice of 1 lemon

salt, pepper, crushed red pepper flakes

Petunjuk

Cook the pasta in a pot of salted, boiling water. Strain the pasta and dress it lightly in olive oil. Let it cool for a bit while you prep the other ingredients.

For the chicken, add the yogurt, oil, lemon, herbs, and seasonings to bowl and mix. Add in the chicken thighs, sprinkle them with a big pinch of salt, and toss together until evenly coated. Place the thighs in a baking dish and bake at 450° for 35 minutes + a few minutes of broiling.

Pour the ingredients for the pasta salad dressing into a jar and shake well until well mixed.

In a large serving bowl, add the cooked pasta, feta, cucumbers, red onion, chickpeas, pecorino, and arugula. Season with a big pinch of salt and pepper, and pour over most of the dressing. Toss the pasta salad together and adjust seasoning / add more dressing if needed.

Serve a few scoops of pasta and top the chicken with a squeeze of lemon. Enjoy! 💕🍋🌿
