Cheesy Garlic Butter Beef Spaghetti in Creamy Cheddar Parmes

10 oz spaghetti
1 lb ground beef
1 tbsp olive oil, if needed
3 tbsp butter, divided
3 cloves garlic, minced
1 small yellow onion, finely diced
1 1/4 cups heavy cream or half and half
1/2 cup beef broth or pasta water
1 cup shredded cheddar cheese
1/3 to 1/2 cup grated Parmesan
1 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt, plus more to taste
1/4 tsp black pepper
Pinch red pepper flakes (optional)
Chopped parsley or green onions for garnish (optional)

Cook spaghetti in salted boiling water until al dente, 9 to 10 minutes. Reserve 1/2 cup pasta water, then drain and set aside.
Heat a large deep skillet over medium high. Add 1 tbsp butter and a little olive oil if needed, then add ground beef. Cook 5 to 7 minutes, breaking it up, until browned. Drain extra grease.
Add onion and cook 3 to 4 minutes until softened. Stir in minced garlic and cook about 30 seconds.
Add remaining 2 tbsp butter, Italian seasoning, garlic powder, onion powder, salt, pepper, and red pepper flakes if using. Stir 1 minute so the beef gets coated in garlic butter.
Pour in cream and broth or pasta water. Stir, scraping the bottom, and simmer 3 to 4 minutes until slightly thickened.
Turn heat to low. Stir in cheddar a handful at a time until melted, then add Parmesan and stir until the sauce is smooth and creamy. If it gets too thick, add a splash of pasta water. Taste and adjust seasoning.
Add cooked spaghetti to the skillet. Toss 2 to 3 minutes until every strand is coated in the cheesy garlic butter sauce.
Let sit off the heat a couple of minutes so the sauce clings.
