Strawberries and cream cake

450g ripe strawberries, sliced 180g caster sugar 160g butter, softened 2 eggs

1 tsp vanilla extract

180g self-raising flour 60ml milk 60ml water To serve: Avonmore Fresh Dessert Cream

Petunjuk

1 Preheat the oven to 180"C/160°C fan/gas mark 4 and grease and line the base of a 23cm square cake tin. Arrange 350g of the strawberries in a single layer in the bottom of the tin and sprinkle over two tablespoons of

the sugar.

2 Cream the butter and all but two tablespoons of the sugar for 4-5 minutes until pale and creamy, then beat in the eggs one at a time.

3 Beat in the vanilla, flour and milk until the mixture is just combined.

4 Spoon the cake batter over the strawberries and smooth the top. Bake for 35-45 minutes until a skewer inserted into the centre comes out clean. Allow to cool for 10 minutes, then invert onto a serving platter.

5 Combine the remaining strawberries, water and remaining sugar in a small saucepan over a low heat for 10 minutes until the strawberries are soft. Puree in a blender until smooth, then pass through a sieve to remove any lumps.

6 Use a fork to poke holes in the warm cake, then spoon over the strawberry sauce.

7 Leave to cool, slice into squares and serve with Avonmore Fresh Dessert Cream.
