Baked Shrimp Cups

1 1/2 cups cooked rice, I used jasmine but any rice will work

3 sheets nori, cute into 12 squares

1 lb peeled and deveined shrimp (uncooked), cut into small pieces

Pinch of salt

1/2 cup softened cream cheese

3 tb kewpie mayo

1 tsp sriracha

2 tb soy sauce or coconut aminos

Chives for garnish

Prepare 2 cups of rice according to package instructions and set aside. Preheat oven to 400F. Next, pat dry the shrimp and cut into small pieces. Add a pinch of salt. In a separate bowl, add the softened cream cheese, kewpie mayo, sriracha and soy sauce/coconut aminos. Mix well. If the cream cheese makes it hard to mix, just microwave for 20 seconds. Pour the sauce onto the shrimp, and toss to coat well. Cut the nori sheets into even sized squares. Add 1-2 tb cooked rice to each square, pressing down with your fingers or the spoon. Press each nori square into a muffin tin. Scoop 1-2 tb of the shrimp mixture into each muffin cup. Bake for 15 minutes, then broil for 2 minutes at the end to get the top crispy. Remove from oven, top with extra spicy mayo and chives for garnish. These are best served immediately.
