Misir Wat - Ethiopian Red Lentils

Bahan-bahan

4 Tbsp. Nit’r Qibe, divided 3 and 1 (Ethiopian butter)

2 tsp finely minced garlic

2 c. finely diced yellow onion

3 Tbsp. tomato paste

¾ c. finely chopped Roma tomato, (about 1 tomato)

1 Tbsp. Berebere spice

1 c. red lentils, rinsed

2 ½ c. vegetable stock

Salt, to taste

Petunjuk

1. Melt the 3 Tbsp. of Nit’r Qibe in a medium sauce or stock pot. Add the onions and cook over medium-high heat for 8-10 minutes, until golden brown.

2. Add the garlic, tomatoes, tomato paste and the berebere and simmer over medium heat for 5-7 minutes.

3. Add the lentils, stock, and a healthy pinch of salt, bring it to a boil, and then reduce to low. Cover and simmer the lentils, stirring occasionally for 25-30 minutes, (adding more stock as needed), or until the lentils are soft.

4. Stir in the remaining nit’r qibe, taste, and season to taste.
