Summer Tomato Roll

2 large tomatoes, very thickly sliced 1 large red onion, very thickly sliced Olive oil, to bmsh Salt and black pepper 60g mayonnaise 40g gherkins, chopped 1 tbsp ketchup 2 tsp capers 2 tsp Dijon or wholegrain mustard 1 tbsp fresh parsley, chopped To serve: 4 soft baps, halved Rocket 4 radishes, thinly sliced
Petunjuk
1 Heat a barbecue or grillpan to a medium-high heat. Brush the tomato and onion slices with oil and season with salt and pepper. Cook for three minutes per side until just charred. Remove both from the heat, separate the onion into rings and set aside.
2 Stir together the remaining ingredients and spread the mixture onto both sides of the baps. Top with rocket, sliced radishes and the warm
tomatoes and onions. Serve immediately.

Tomato Tips
• Irish tomatoes are at their best between May and October. • A member of the nightshade family (along with aubergines, peppers and chillies), the tomato is technically a berry. However, they go so well with savoury ingredients that they are usually classed as a vegetable.
• Look for firm tomatoes with wrinkle-free skins and a prevalent tomato smell.
• Tomatoes have the best, sweetest flavour if they've been allowed to ripen on the vine before they've been picked.
• Don't keep tomatoes in the fridge, as it destroys their flavour. They are much happier in the fruit bowl.
