Garlic Parmesan Chicken Skewers Topped with Lemon Butter

3 lbs Boneless Chicken Thighs
2/3 cup Olive Oil
1/2 cup White Wine OR 1 teaspoon chicken bouillon
1 ½ tsp Black Pepper
2 tsp Kosher Salt
2 tsp Red Pepper Flakes
1 tbs Oregano
1 ½ tbs Garlic Powder
1 cups Panko Crumbs
2/3 (+) Grated Parmesan Cheese
Sauce
1 stick Butter- I use salted, but you can do either
3-4 TBS Lemon Juice
Marinade- in a large bowl, mix chicken, olive oil, white wine OR chicken bouillon, 1/2 teaspoon black pepper, 1 teaspoon salt. Refrigerate for at least 30 minutes.
In another bowl, mix panko crumbs, parmesan, garlic powder, oregano, red pepper flakes, remaining salt & pepper.

Preheat grill to medium high
Once chicken has marinaded, remove and add the breadcrumb mixture to the chicken and toss until it’s evenly coated. Add chicken to skewers
Add chicken to grill and cook for about 5 minutes, then flip and cook for another 4 minutes or until internal temperature reaches 165°F
Finish with a brushing of lemon butter
Oven Instructions:
Preheat oven to 400
Cook for 10 minutes then turn oven to broil and cook for 4 minutes, flip, and cook for another 4 minutes until internal temperature is 165°F
