Calabrese Chili Crisp & Burrata

Bahan-bahan

2 burrata balls (I'm using 4 oz balls).

Honey to taste.

Chives to taste.

Olive oil fried baguette.

3 garlic cloves (thinly sliced).

1/2 cup olive oil + more for topping.

8 slices of calabrese (chopped).

1-2 tbsp crushed red peppers (adjust for desired heat).

1 ½ tbsp sesame seeds.

2 tsp smoked paprika.

1 tsp oregano.

1 tsp cane sugar.

1/8 tsp kosher salt.

1/4 tsp white pepper.

2 tsp chipotle powder (add less for less heat).

Pinch of msg (optional).

1/2 tsp tamari.

1/4 tsp red wine vinegar.

Petunjuk

Add your calabrese to a pan and turn on to medium heat. Once it starts crisping lower to medium low until it is crispy but NOT burnt. Set over a paper towel.

Add 1/4 c of the olive oil to that pan with the garlic and again, low heat until it is pale golden. Look at the color of the garlic in the video. It burns super easy. Set over a paper towel.

Add in the sesame seeds, paprika, chipotle, crushed red peppers, white pepper, sugar and salt. Let it bloom at low heat for 2 min. Kill heat, add in tamari and vinegar.

Chop the garlic and calabrese real small and add it in. Add in remaining oil and more if you want it looser. Adjust for salt.

Drizzle it over the burrata, then add honey and chives.
