6 chicken drumsticks, skin on
1 boneless duck breast, skin on
3 x 15oz cans cannelllini beans, drained and rinsed
4oz pancetta, diced
12 oz smoked garlic sausage, sliced
2 cups chicken broth
2 teaspoons fresh rosemary
2 teaspoons fresh thyme
1 cup bread crumbs
1/2 cup grated parmesan cheese
1 onion, diced
3 cloves garlic, pressed
1 tbsp each of kosher Salt and pepper
Petunjuk
1. Preheat oven to 400 F.
2. Fry pancetta and duck breast together, skin side down in large cast iron pan at low medium heat until fat is rendered and skin is crispy (5-10 minutes).
3. Remove duck and cooked pancetta to separate plates, leave fat in pan.
4. Brown sausage slices, turning to both sides, approximately 5 minutes.
5. Add chicken drumsticks and brown on all sides, 5-10 minutes. Remove all meats.
6. Pour off fat into measuring cup for use in next steps. Don't wipe out pan.
7. Cook onion in pan at medium-low temperature until soft and translucent.
8. Add garlic and cook 2 minutes until fragrant.
9. Add 1 cup chicken stock.
10. Mash 1/4 of beans, then add all beans to the pan.
11. Stir in rosemary and thyme along with salt and pepper.
12. Add chicken, pancetta and sausages back into beans.
13. Add remaining 1 cup of stock and return pan to simmer.
14. Mix bread crumbs, parmesan, and 1/4 cup of reserved duck fat and mix with hands.
15. Slice duck breast into 1/2" strips and place on top of pan ingredients.
16. Sprinkle half of bread crumb mixture over pan and bake for 10 minutes or until browned.
17. Remove pan from oven and push browned bread crumbs down into beans, add remaining bread crumb mixture on top of pan and bake for 10 more minutes.
18. Turn off oven and let sit in oven for 15 minutes.
19. Remove from oven and let sit for 5 more minutes before serving.
