For the pork:

2 lb pork loin

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

1 tbsp olive oil

For the potatoes:

1 ½ lb baby potatoes, halved

2 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

For the garlic herb sauce:

4 tbsp butter, melted

4 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1 tsp Italian seasoning

For topping:

1 cup shredded mozzarella or cheddar cheese

2 tbsp fresh parsley, chopped

Petunjuk

Preheat oven:

Set oven to 375°F (190°C).

Season the pork:

Rub pork loin with salt, pepper, paprika, and olive oil.

Prepare potatoes:

Toss potatoes with olive oil, salt, and pepper. Spread in a baking dish or skillet.

Add pork:

Place the pork loin on top of the potatoes.

Make garlic herb butter:

Mix melted butter, garlic, thyme, rosemary, and Italian seasoning. Pour evenly over pork and potatoes.

Bake:

Roast for 45–55 minutes, or until pork reaches an internal temp of 145°F and potatoes are tender.

Add cheese:

Sprinkle cheese over the top and return to oven for 5–10 minutes until melted and bubbly.

Rest & serve:

Let pork rest for 5 minutes before slicing. Garnish with fresh parsley.
