BASIC ROAST PORK WITH CRISPY CRACKLING AND APPLE HORSERADISH

1.8kg pork loin, boned and rolled
Salt and black pepper
3 onions, thickly sliced
2 tbsp fresh rosemary, chopped
1 tbsp vegetable oil
For the apple horseradish sauce:
3 medium cooking apples, peeled, cored
and roughly chopped
50g caster sugar
1 tbsp prepared horseradish
Juice of I lemon
To serve:
Roast potatoes or mash

1 Remove the pork from the fridge one hour before cooking. Use the tip of a sharp knife to score the skin in a criss-cross pattern, being careful not to cut through into the meat. Rub the skin with salt, then set aside for the hour.
2 Preheat the oven to 230°C/2 ICC fan/gas mark 8.
3 Place the onion slices in a roasting tray, season with salt and pepper and scatter over the rosemary, then sit the pork on top. Rub the skin with the oil.
4 Roast for 15 minutes, then reduce the temperature to 180°C/160°C fan/gas mark
4 and continue to roast for another hour and 30 minutes or until the pork is completely cooked through. Transfer the pork to a board and allow to rest for 15 minutes.
5 While the pork cooks, make the sauce. Place the apples in a pan with the sugar and a splash of water. Place over a medium heat and cook for 15 minutes or until very soft. Remove from the heat and allow to cool for 10 minutes, then stir in the horseradish and lemon juice.
6 Carve the pork and serve with the roasted onions, crackling, apple horseradish sauce and some roast or mashed potatoes.
