Crab & Spinach Stuffed Mushrooms

16 to 20 large white or cremini mushrooms, stems removed

1 tbsp melted butter (for brushing caps)

1/2 lb lump crab meat, drained and carefully picked over

1 tbsp unsalted butter

2 cloves garlic, minced

1 cup fresh spinach, chopped (measured before cooking)

4 oz cream cheese, softened

1/4 cup Parmesan cheese, grated

1/4 cup mozzarella cheese, shredded

1 tsp Old Bay seasoning

1/4 tsp black pepper

2 tbsp panko breadcrumbs (optional)

1 tsp melted butter (for panko topping)

Prepare the Mushroom Caps:

Preheat the oven to 375°F. Lightly grease a baking dish. Wipe mushroom caps clean with a damp towel and brush lightly with melted butter. Place caps hollow-side down and roast for 5 minutes to release excess moisture. Remove and set aside.

Sauté the Aromatics:

Melt 1 tablespoon butter in a skillet over medium heat. Add garlic and cook for about 30 seconds until fragrant. Add chopped spinach and sauté for 1 to 2 minutes until fully wilted. Remove from heat and allow to cool slightly.

Build the Filling:

In a mixing bowl, combine cream cheese, Parmesan, mozzarella, Old Bay seasoning, and black pepper until smooth. Fold in the spinach mixture, then gently incorporate the crab meat, keeping the lumps as intact as possible.

Stuff and Top:

Turn mushroom caps hollow-side up. Spoon a generous portion of filling into each cap. If using, combine panko breadcrumbs with 1 teaspoon melted butter and sprinkle lightly over the tops.

Bake and Serve:

Bake uncovered for 18 to 20 minutes until the filling is hot and bubbling and the tops are golden brown. Serve immediately while hot.
