I’ve been craving this for a while, so I thought I’d try making it using Vietnamese rice paper instead of casings. It actually works so well to get that crispy skin!
What I used:
250g minced pork
3 garlic cloves, pounded
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
4 tbsp cooked rice
Vietnamese rice paper
How I made it:

Mix the minced pork with the pounded garlic, garlic powder, salt, black pepper, and cooked rice. Mix everything really well.
Dip the rice paper in water for just one second to soften it. Lay it flat, put the pork mix on, and roll it tightly into a sausage shape.
Lay them on a tray. Rice paper sticks easily, so I highly recommend using a silicone baking sheet. If you use parchment paper, make sure to brush a lot of oil on the outside of the sausages so they don’t stick.
Use a fork or toothpick to prick some holes in the sausages. This lets the steam out so they don’t pop while baking.
Bake at 180C for 10 minutes, turn them over, then turn the oven up to 200C for another 10 minutes until done.
