Turkey Gravy

50g butter
1 portion of turkey giblets
1 medium onion, diced
Few sprigs of thyme
2 carrots, chopped
2 tbsp plain flour
Turkey roasting juices
1 l water
Salt and black pepper

1 Melt the butter in a pot over a medium- high heat. Cook the turkey giblets, onion, thyme and carrots for 5-6 minutes until browned. Scatter over the flour and cook for 5-6 minutes, stirring.
2 Pour in the strained turkey juices and the water and cook for 20 minutes, stirring frequently.
3 Skim off any fat and strain the mixture through a sieve into a clean pot. Reduce the liquid over a medium heat until it reaches your desired consistency. Season to taste before serving.
