For the Pasta:
• 1 chicken stock cube
• 1.2 litres boiling water
• 3 tosp olive oil
• 2 onions, finely chopped
• 1 tsp ground cumin
• 1 tsp paprika •
• 1 tsp tomato purée
• 500g minced lamb
• 1 tsp salt
• ½ tsp ground black pepper
• 300g conchiglie pasta
• 2 bay leaves
For the Garlic Yoghurt:
• 1 large garlic clove, finely grated
• 150g thick natural yoghurt
• ½ tsp sea salt flakes
For the Chilli Butter:
• 45g unsalted butter
• 1 tbsp extra virgin olive oil
• 1 tbsp Turkish sweet red pepper paste (tatli biber salçasi)
• 1 tsp pul biber (Aleppo pepper flakes)
• 1 tsp dried mintTo Serve:
• 100g halloumi cheese, finely grated
• 1 tsp dried mint
Petunjuk
1. Dissolve the stock cube in boiling water and set aside.
2. Heat olive oil in a large pan, add chopped onions and cook until golden (10-12 mins).
3. Add cumin, paprika, and tomato purée. Cook for 1 minute.
4. Add minced lamb, season with salt and pepper, and cook until browned (4-5 mins).
Stir in pasta, bay leaves, and stock. Bring to a boil, then simmer for 10-12 mins until pasta is al dente and liquid reduces.
6. For the chilli butter: Melt butter with olive oil. Stir in red pepper paste, pul biber, and mint.
Let it bubble gently, then remove from heat.
7. For the garlic yoghurt: Mix garlic, yoghurt, and salt in a bowl.
8. To serve: Plate the pasta, top with garlic yoghurt, drizzle with chilli butter, and sprinkle with grated halloumi and dried mint.
