3 tbsp vegetable oil Zest and juice of 1/2 a lemon or 1 tbsp bottled lemon juice 1 garlic clove, cmshed 1cm piece of fresh ginger, peeled and grated, or 1 tsp ground ginger A handful of fresh coriander, finely chopped A handful of fresh parsley, finely chopped, plus extra to serve 1 onion, peeled and chopped into quarters 2 large carrots, chopped into thick rounds 1 potato, peeled and chopped into cubes

½ a vegetable stock cube

Petunjuk

1 Preheat the oven to 180°C/160°C fan/gas mark 4. Measure the oil into a teacup, jug or other small receptacle. Add the lemon zest into the oil with the garlic, ginger, coriander and parsley.

2 Squeeze in the lemon juice, stir the mixture together and set aside.

3 Place the onion, carrots and potato into roasting dish.

4 Pour the marinade over the top and shake to coat the vegetables. Place the roasting dish into the oven for about one hour, shaking occasionally to loosen the vegetables and re-coat them in the marinade.

5 When the carrots and potatoes are tender, remove the vegetables from the oven and tip them into a food processor. Dissolve the stock cube in 500ml of boiling water and pour this into the food processor to cover the vegetables. Blend until smooth, and serve with a flourish of parsley and a smile.
