Edamame Salad

Bahan-bahan

2 cups shelled edamame (frozen veggie section)

1/2 c diced carrots

1/2 cup diced red peppers (or small jar pimentos) or Both!

5 oz Manchego cheese or white cheddar

Dressing:

3tbsp olive oil

3 tbsp champagne vinegar *

1/2 tsp garlic powder

1/4 tsp pepper

1/2 tsp smoked paprika

* white wine vinegar if can’t find champagne vinegar

Petunjuk

Cut all ingredients into small, bite sized pieces and mix together. Yummy and healthy!

Catatan

The measurements for dressing are a guide. I’m a bit heavy handed on the olive oil and vinegar.
