Dinner - Autumn/ Winter

Beans, Fresh Rosemary, Garlic, Lemon, Chilli and Parmesan!

Bahan-bahan

2 large leeks or 4 smaller ones, roughly chopped

4 celery sticks, roughly chopped

4 to 6 garlic cloves, sliced

6 or more sprigs of rosemary, leaves removed from stem

2 cans white beans, drained

600ml plus more maybe chicken or veg stock

loads of Parmesan for grating

juice of 1 to 2 lemons

chilli flakes optional

flaky salt

cracked black pepper

extra virgin olive oil

For the croutons, tear up some stale sourdough into small bite size pieces on an oven tray and drizzle generously with salt and pepper and the rosemary leaves of 2 of the sprigs. Roast in a hot oven until golden and crunchy - around 10mins

Petunjuk

heat a generous glug of olive oil in a pot and sweat down the leeks, celery, garlic and rosemary

when softened, add the beans and the stock and gently simmer for around 20 mins

add the juice of 1 lemon, lots of grated Parmesan, black pepper, a little salt and chilli flakes

take the soup off the heat and blend until smooth

taste to make any adjustments. Should be really herby, lemony, salty, creamy, a little spicy and delicious!!

serve with a drizzle of extra virgin olive oil and the rosemary croutons
