Speedy Creamy Chorizo and Sweetcorn Pasta

180g Rigatoni Pasta
150g sweetcorn
1 echalion shallot
1 Garlic clove
90g chorizo (diced)
100g baby spinach
100g creme fraiche
50ml of water
Grated Italian style cheese

1. Cook the pasta for 12 minutes. Drain, put pack in pan and drizzle with oil to keep from sticking.
2. While pasta cooks, drain and rinse the sweetcorn; halve, peel and thinly slice the shallot; peel and grate the garlic (or use a garlic press).
3. Put a large frying pan on heat (no oil). Once hot, add the diced chorizo and sweetcorn. Fry until chorizo and sweetcorn are starting to brown (4-5 mins).
4. Once browned, lower the heat to medium and add the shallot to the pan. Cook until softened 3-4 mins, stirring occasionally. Mix in the garlic and Cook for 30 seconds. Stir in the spinach, one handful at a time, until wilted, 1 to 2 minutes.
5. Once the spinach is wilted, add the crème fraîche and water for the sauce into the pan. Bring to the boil then remove from the heat. Mix in half some of tsp the Italian style cheese. Season to taste with salt and pepper
6. Add the drain pasta to the frying pan and gently mix until well coded in the sauce. Serving large bowls with cheese sprinkled on top.
