30-minute Dinner: Lemony Baked Boursin Pasta with Olives

16 ounces dried pasta (bucatini, linguine, spaghetti, fettuccine -use what you love / what you have)
1 cup roughly chopped Castelvetrano olives (or whatever olives you have on hand)
2 rounds garlic & herb Boursin
2 cloves garlic, minced
1/3 cup dry white wine (I used Chablis)
2 tbsp good olive oil
1 tsp fresh thyme (use less if dried)
Zest and juice of 1 lemon, plus more zest for serving
1–2 tsp kosher salt
Freshly cracked black pepper

Preheat oven to 400°F.
Add the Boursin, olives, garlic, white wine, olive oil, lemon zest and juice, thyme, salt, and a few cracks of black pepper to a 9x13 baking dish. Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
Meanwhile, cook pasta until al dente. Reserve about 1 cup of pasta water before draining.
Remove the baking dish from the oven and stir until the Boursin forms a creamy sauce. Add the pasta a little at a time, tossing with tongs and loosening with reserved pasta water as needed until glossy and well coated.
Finish with extra lemon zest and serve immediately.
