Indian Rice

300g long-grain rice, preferably Basmati
1.91 water
2 tsp salt
2 cloves
3 tbsp vegetable oil
1/2 tsp mustard seeds
1/4 tsp turmeric
1/2 tsp cumin seeds
Pinch of ground cinnamon
1/4 tsp chilli flakes
1 onion, chopped
3 garlic cloves, crushed
To garnish:
Crispy fried onions

1 Place the rice in a sieve and rinse under cool running water until the water runs clear. Soak the rice in cool water for 30 minutes,
then drain.
2 In a large pot, bring the water to a boil. Add the salt, rice and cloves. Stir together and simmer for five minutes or until cooked.
3 Transfer the rice into a colander and rinse with cold water. Remove the cloves and discard. Set the rice aside to drain.
4 Heat the oil in a large pan over a medium- high heat. Add the mustard, turmeric, cumin seeds, cinnamon and chilli flakes. Cook for 30-40 seconds until the mustard seeds start popping, then add the onion. Cook for 6-7 minutes until the onion begins to brown.
5 Add the garlic and cook for another two minutes. Add the rice and mix well. Cook for another 3-4 minutes, stirring often. Garnish with crispy fried onions and serve.
