Cottage Cheese Mozzarella Bites

1 cup shredded mozzarella cheese

1 large egg

1/4 cup almond flour or breadcrumbs

1/2 tsp garlic powder

1/2 tsp Italian seasoning

Salt & pepper to taste

Optional but delicious:

Grated parmesan

Crushed red pepper flakes

Fresh parsley

Preheat oven to 375°F and line a baking sheet with parchment paper.

Mix cottage cheese, mozzarella, egg, almond flour, garlic powder, Italian seasoning, salt, and pepper until combined.

Scoop small portions and roll into bite-sized balls.

Place on baking sheet and bake 15–18 minutes until golden and set.

Let cool slightly and enjoy warm!
