Chili Oil Chicken Udon

10 to 12 oz udon noodles, cooked
2 to 4 chicken thighs, chopped into chunks
4 green onions, sliced (reserve some for garnish)
3 cloves garlic, minced
1 shallot
1 tablespoon minced ginger
1 to 2 teaspoons chili flakes
4 tablespoons neutral oil
2 tablespoons hoisin
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 and 1 half to 2 tablespoons honey
juice of half a lime

Cook the chicken in a hot pan until fully done, then remove and set aside. In the same pan add most of the green onions, minced shallot, garlic, ginger and chili flakes. Pour in the neutral oil and let it bubble. Stir in hoisin, oyster sauce, soy sauce, honey and lime juice to make the sauce thick and glossy. Add the chicken back in followed by the cooked udon and remaining green onions. Toss until everything is coated and saucy. Serve hot and enjoy!
