This delicious soup is actually considered a poor man’s food back home because it was created to repurpose leftover ingredients (leftover rice, ground beef, onions) along with a couple other basic pantry staples that helped extend it (lentils) to create something new and filling.

We love it so much that we’ll go ahead and cook the ground beef, cook the rice and peel/slice the onion all in preparation for this soup, we don’t wait for leftovers.

Recipe ⤵️

1 cup red lentils

1/2 cup rice (I used basmati)

2L water (more if needed)

1 chicken bouillon cube

1 tsp cumin

1 tsp salt (more to taste)

1/2 tsp turmeric

1/2 tsp black pepper

1/2 lb cooked ground beef

1 medium onion, sliced

Add the lentils and rice together in a pot and wash really well until the water runs clear. Cover with water and turn on the heat. Add the chicken bouillon cube and cook for about 40 mins, stirring occasionally so nothing sticks to the pot.

After 40 minutes, the lentils should have mostly broken down (dissolved) and the rice still a bit chunky. At this point, add the cumin, salt, turmeric and black pepper as well as the cooked ground beef. Let it cook for another 5-10 mins or until the soup has thickened, and then add the sliced onions and cook for only 5 mins. Adjust the salt to your taste and serve with stale bread and Aleppo pepper.

If at any point, the soup feels too thick, feel free to add more water to reach your desired consistency.

this soup is meant to be chunky however if you wanted a smoother consistency, you could blend it with an immersion blender before adding the beef and onions

if you have leftover cooked rice, you can add that at the end of the cooking instead of adding uncooked rice at the beginning
