Ingredients (makes 8–10 muffins):
1 cup cottage cheese (blended smooth)
2 large eggs
¼ cup honey or maple syrup
1 tsp vanilla extract
1 ½ cups oat flour (or all-purpose flour)
1 tsp baking powder
½ tsp baking soda
Pinch of salt
½ cup fresh or frozen raspberries (don’t thaw if frozen)
2 tbsp sliced almonds (plus more for topping)

Step 1: Preheat the Oven
Set oven to 350°F (175°C). Line a muffin tin with paper liners.
Step 2: Make the Batter
Blend cottage cheese until creamy. In a bowl, whisk eggs, honey/maple, and vanilla. Stir in blended cottage cheese.
Step 3: Combine Dry Ingredients
Mix oat flour, baking powder, baking soda, and salt in a separate bowl. Fold into wet mixture until just combined.
Step 4: Add Raspberries & Almonds
Gently fold in raspberries and almonds. Don’t overmix.
Step 5: Bake
Spoon batter into muffin cups, top with extra sliced almonds, and bake for 18–22 minutes until golden and a toothpick comes out clean.
Step 6: Cool & Enjoy
Let cool slightly before serving warm or at room temperature.
