Lemon Cod

1½ Ib fresh cod fillets, cut into thick strips

2 tbsp olive oil

2 tbsp unsalted butter

4 garlic cloves, finely minced

1 cup heavy cream

Zest and juice of 1 lemon

1 tsp dried oregano

1 tsp dried thyme

Salt and black pepper, to taste

Fresh parsley, finely chopped

Season the Cod

Pat the cod dry and season gently with salt, pepper, oregano, and thyme. The surface should look dry and ready to sear, not wet.

Sear to Golden

Heat olive oil and butter in a wide skillet over medium heat. Lay the cod strips in carefully and let them cook undisturbed until a golden crust forms

Turn with Care

Flip once, slowly, letting the second side color while the fish stays soft and flaky inside.

Build the Garlic Base

Lower the heat slightly and add minced garlic. Stir gently until fragrant, just a few seconds-never browned.

Create the Creamy Sauce

Pour in the cream, stirring slowly as it warms. The sauce should thicken softly, coating the pan like silk.

Brighten with Lemon

Add lemon zest and juice, tasting as you go. The sauce should feel rich but lively, never sharp.

Finish and Rest

Spoon sauce over the cod, sprinkle with fresh parsley
