One-pot Sausage and Fennel Rigatoni

Tonight’s dinner is a one-pot spin @inagarten’s classic sausage and fennel rigatoni. Sweet Italian sausage, caramelized fennel, white wine, parmesan, and a splash of cream come together in the coziest bowl of pasta.

1 pound sweet Italian sausage, casings removed and torn into pieces

1 large fennel bulb, diced

½ large yellow onion, diced

Kosher salt and freshly ground black pepper

6 cloves garlic, finely minced, to taste

½ teaspoon crushed fennel seeds (or 1 teaspoon for a stronger fennel flavor)

½ teaspoon red pepper flakes

2 tablespoons tomato paste

½ cup dry white wine

5–6 cups chicken broth

1 pound rigatoni

½ cup heavy cream

1 teaspoon Dijon mustard (optional)

1 cup freshly grated Parmesan cheese, plus more for serving

Zest of 1 lemon

1 tablespoon unsalted butter, optional

½ cup chopped fresh parsley, plus more for serving
