Turn lions mane mushrooms into juicy, meaty skewers marinaded with Levantine spices.
Recipe
300–400g oyster mushrooms, torn
½ cup coconut yogurt
2 tbsp tomato paste
2 tbsp lemon juice
1½ tbsp olive oil
3–4 garlic cloves, minced
1 tsp Aleppo pepper
½ tsp cumin
½ tsp coriander
¼ tsp cinnamon (optional)
½ tsp salt
Coat mushrooms well. Marinate 1–6 hrs. Grill first then broil in oven on spit.
Serve in pita with toum, pickles, fries & salad
