Low Calorie Halal Cart-style Chicken & Rice

25oz chicken breast
226g fat free plain Greek yogurt
40g (~3 tablespoons) olive oil
2 tablespoon shawarma seasoning or seven spice*
2 tspn smoked paprika
1 tablespoon minced garlic
1 tspn salt
if you can’t find these, add cumin, coriander and a dash of cinnamon
Rice:
1 small onion
1 tablespoon butter
1 tspn turmeric
1/2 tspn cumin
1 tspn sea salt
300g basmati rice, rinsed
2 ¾ cups of chicken broth
White sauce:
226g fat free plain Greek yogurt
Juice of 0.5-1 lemon (adjust to taste)
1 tablespoon honey
1 teaspoon garlic powder
1/2 teaspoon Salt
60g milk (or any amount to desired consistency)
Diced Roma tomatoes & cilantro or parsley
STORAGE/REHEAT TIP*
Store chicken and rice together, frozen. Reheat in microwave when ready to eat (microwave 3.5-4 minutes). Store sauce in a separate container and drizzle over the top when ready to serve. Garnish with fresh diced tomatoes and cilantro/parsley
