Mini Chocolate Chip Cookies

• 1 cup salted butter, cold

• 1/2 cup sugar

• 3/4 cup packed brown sugar

• 2 eggs

• 1 Tablespoon vanilla

• 3 cups flour

• 2 teaspoons cornstarch

• 1 teaspoon baking soda

• 1 teaspoon baking powder

• ½ teaspoon salt

• 1 cup milk chocolate chips

• 1 cup semi-sweet chocolate chips

1 Preheat oven to 375 degrees.

2 Add cold butter to the bowl of a stand mixer. Beat on medium-low with paddle attachment for 1 minute.

3 Add sugar and brown sugar. Beat on low for 1 minute. Beat on medium-high for 1 minute. Scrape down the bowl.

4 Add eggs and vanilla. Mix until mostly combined.

5 Add flour, cornstarch, baking soda, baking powder, and salt. Mix for just a few seconds on low.

6 Add chocolate chips. Mix until cookie dough is completely mixed and comes together.

7 Roll dough into 0.4 oz cookies. See the notes below.

8 Place dough balls on a cookie sheet. Bake one sheet at a time on the middle rack for 5-7 minutes. Cookies should be slightly firm but still very soft. (See note below!)

9 Let cookies cool on the cookie sheet until set up enough to transfer.

10 Store in an airtight container.

• I use a #70 (0.9 Tablespoon) cookie scoop and it's the perfect size. If you can't find a #70 scoop, you can also use a #40 (0.75 oz) scoop and divide the dough ball in half. (The cookies should be roughly 2 ½ teaspoons a dough ball).

• The key to these cookies being soft and melt-in- your mouth, is to slightly underbake them. They'll set up as they cool. They become dry and cakey if baked too long. Pull them out early!

• If you're positive you're not over baking them, but they come out dry and cakey, try decreasing the flour by 14-½ cup to make them more soft.

• To freeze for later- Store cookies in a plastic sealed bag in the freezer for up to 3 months.

• I like baking these on the Nordic Ware Big Baking Sheets (21"x15") because you can bake 35 mini cookies at a time.

• I bake these cookies right on the sheet, no parchment and no non-stick cooking spray.
