_Sausage & Bean Cassoulet__
6-10 good quality sausages ^1
2 onions, diced
2 carrots, thickly chopped
2 sticks of celery, thickly sliced
3 garlic cloves, crushed
100ml white wine ^2
2tbsp tomato purée
2tsp thyme
1tsp oregano
1tsp smoked paprika
1 x 400g tin chopped tomatoes
1 x 400g tin kidney beans, drained
1 x 400g tin butter beans, drained
250ml chicken stock
Warm, crusty bread to serve
If you’re looking for something amazing to serve guests, definitely give ribs or pulled pork or something a go, they’re always amazing in a slow cooker, but for a family meal, this is my favourite.

1) add all the vegetables and the beans to the pot.
2) stir in the herbs and spices.
3) add the tomatoes, stock and wine and combine.
4) place the sausages on top and push down gently so each one is partly submerged.
5) cook for 10 hours on low.
^1 The salt and a lot of the flavour in this recipe comes from the sausages, so pick ones you like and experiment with the flavour.
^2 I often substitute 30ml of distilled white vinegar and 20ml of lemon juice for white wine if I don’t have it about and it works well.
(You can brown the sausages first if you like but it really doesn’t need it unless you’re going for looks.)
