Chicken:
500g boneless chicken, small cubes
1 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp black pepper powder
1 tbsp ginger garlic paste
1/2 tsp garam masala
Salt to taste
1 tsp lemon juice
Pinch red food colour
2 tbsp corn flour
1 tbsp all-purpose flour
1 egg white
1/4 tsp baking soda
1/2 cup oil (for shallow frying)
Sauce:
1/2 tsp cumin
2 tbsp chopped garlic
2 tbsp chopped ginger
2–3 slit green chillies
Curry leaves
1/2 tsp black pepper powder
1/2 tsp red chilli powder
2 tbsp red chilli sauce
1 tbsp green chilli sauce
1/4 tsp vinegar
1/2 tsp soy sauce
Lemon juice (to taste)
3 tbsp plain yoghurt
Chopped cilantro

Combine chicken with red chilli, turmeric, black pepper, ginger garlic, garam masala, salt, lemon juice and food colour. Marinate for as long as you can in the fridge.
Add corn flour, all-purpose flour, egg white and baking soda.Mix and rest 20 minutes.
Shallow fry chicken in oil until cooked and golden. Remove chicken and reserve leftover oil.
In the same oil, sauté cumin, garlic, ginger, green chillies and curry leaves. Add salt, black pepper, red chilli, red chilli sauce, green chilli sauce, vinegar, soy sauce, lemon juice and yoghurt. Cook briefly until combined.
Add fried chicken, toss to coat with the sauce.
Garnish with cilantro and enjoy with naan 🫓 or rumali roti!!
