Quinoa Lentil Meatballs in Tahini Turmeric Sauce🥙
Ingredients:
For the Meatballs:
- 1 cup cooked quinoa
- 1 cup cooked lentils, mashed slightly
- 1/4 cup breadcrumbs (or gluten-free alternative)
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
**For the Sauce:**
- 1/2 cup tahini
- 1/2 teaspoon ground turmeric
- Juice of 1 lemon
- 1/4 cup warm water (adjust for consistency)
- Salt to taste
Steps:
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine all meatball ingredients. Mix until well combined.
3. Form into small balls (about 1 tablespoon each) and place on the baking sheet.
4. Bake for 20–25 minutes or until golden and firm.
5. Meanwhile, whisk together all sauce ingredients until smooth. Adjust water for desired consistency.
6. Serve meatballs drizzled with tahini turmeric sauce, and garnish with fresh parsley.
