Chicken Gyro

Ingredients for 4:
2 tomatoes, halved & sliced
1 red onion, halved & sliced
Frozen chips
Chicken:
1kg chicken thigh fillets
1/3 cup Greek yogurt
4 garlic cloves, finely chopped
Salt and pepper
1 tsp oregano
1 tsp dill
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chilli powder
1 lemon, juiced
1 tbsp olive oil
Tzatziki:
1/2 cup Greek yogurt
1/2 continental cucumber, deseeded
1 garlic clove, finely chopped
2 tbsp fresh dill
1/2 lemon, juiced
Salt and pepper
Flatbread:
250g Greek yogurt
250g self raising flour
Salt (optional)
2 tsp dill (optional)
Spray oil

Marinade the chicken with the ingredients listed above for minimum 30 minutes. Bonus points if it’s overnight.
Once marinated, preheat your oven to 180 degrees.
Transfer the chicken into a lightly oiled loaf tray ensuring the thighs are laying flat.
Bake the chicken for 50 minutes to an hour until golden on top.
While the chicken is baking, combine the ingredients for the tzatziki in a small bowl. Season to taste then set aside in the fridge.
With 30 minutes to go, place your chips in the air fryer or oven and cook until golden.
In a separate bowl, combine the ingredients for the flat bread. Use the back of the spoon to push the flour and yogurt together before kneading until smooth on a floured surface.
Cut into 4 even balls before rolling each ball out to the size of a dinner plate.
In a large pan with spray oil over medium heat, cook the flatbreads until golden in colour on both sides.
Once all components are finito, assemble on top of the flatbread. Tzatziki, tomato, onion, chips, chicken, more tzatziki and wam bam thank you ma’am, you’re done!
