Classic Pound Cake

1 2/3 c cake flour
1/2 tsp salt
1 c unsalted butter, softened
1 1/2 c preferrably fine sugar
5 large eggs at room temp
1 1/2 tsp pure vanilla
1 tsp grated lemon (optional)

Set oven rack to centre position. Preheat oven to 325.
Grease a 9 x 5 x 3 metal loaf pan with butter & dust with flour.
Place butter in mixing bowl & beat until smooth, creamy & light colored 30 sec in mixer, 60 by hand mixer gradually adding sugar & beat until light & fluffy, about 3 minutes on stand mixer, 5 minutes by hand.
It's critical that everything is at room temperature.
Add the whole eggs one at a time and beat for 20 seconds after each. Mixture should be dull and smooth now. If it is grainy or curdled, allowed to warm then reheat for a few seconds. Don't overbeat.
Add vanilla and beat for a few more seconds.
Sift the flour in three equal parts into butter, sugar, egg mixture, folding gently. Pour into prepared pan and bake 10 minutes, rotating 180° halfway through. Test and bake longer if needed. Cool on rack 5 to 10 minutes before removing from pan.
