Cajun Beer Batter

1 cup flour

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon black pepper

1 egg

beer

1 teaspoon Cajun seasoning

Optional: minced green onions or chives, lemon zest, other herbs and/or spices.

In a small mixing bowl combine flour, salt, pepper, Cajun seasoning, and garlic powder. Lightly beat egg and add to the bowl. Add at least one can of beer to the batter; this will result in a very thick batter. Thin to desired consistency with additional beer.
