Mediterranean Halloumi Orzo Salad

THE summer pasta salad of all pasta salads!! Golden chunks of halloumi, blistered tomatoes, a zesty lemony dressing… it really is just a good time in a bowl 🙂↕️

Ingredients - makes 3 to 4 servings:

180–200g orzo

1 block halloumi, cut into chunks

200-250g cherry tomatoes

4 sliced small cucumbers or ½ a regular cucumber (chop in to quarters)

1 small diced red onion

100g (drain weight) grilled sliced artichokes

A handful of sliced olives

Handful of torn fresh basil (can also sub for mint or parsley)

Optional toasted pine nuts

Dressing:

3 tbsp olive oil

1 tbsp lemon juice (or red wine vinegar)

1 tsp Dijon mustard

1 grated clove garlic

1 tsp dried oregano

Salt & pepper to taste

Optional additions:

A little lemon zest

A splash of oil from the artichoke jar

A pinch of chilli flakes

A touch of honey to balance the lemon

Recipe:

Roast tomatoes at 200°C with a little olive oil & salt until soft and blistered (10–15 mins) and allow to cool.

Cook the orzo according to package instructions. Rinse with cold water until cool, drain again & set aside.

Fry halloumi chunks in a little oil until golden. I also added a sprinkle of chilli flakes & a little drizzle of honey but this is optional!

Whisk dressing ingredients together and adjust to taste.

In a large bowl, combine the orzo, halloumi, artichokes, tomatoes, cucumber, olives, red onion & basil. Pour over the dressing. Season with a little extra salt & pepper and toss it all together. Finish with optional pine nuts if using.

Stores up to 3 days in the fridge in an air tight container. Ideally store dressing separately and toss through before serving.
