Blue Cheese and Peach Crepe Filling

2 peaches, Diced. Fresh or defrosted

1/4 cup red onion, Minced

1/4 cup walnuts, Crushed

2 tsp parsley, Chopped

2 tsp olive oil

1 oz blue cheese

honey, For drizzling

Combine all ingredients except blue cheese and honey into a bowl and stir well to mix. Crumble the blue cheese into the mix and stir gently.

Fill each crepe with a spoonful of the mixture and then close. Spoon some more on top and then drizzle with honey.
