Peas on Toast

For the smashed peas
300g peas
1 tbsp miso
2 spring onions
1 green chilli
½ lime
1 tsp salt
For the sesame salt
2 tbsp white and black sesame seeds
Pinch of flakey salt
To serve
Thickly sliced sourdough

Before you start you will need a pestle and mortar + a stick blender / food processor
Make the miso peas | Boil a pan of salted water and blanch the peas for 2–3 minutes until cooked through, then refresh under cold running water to keep them bright green | Loosen the miso with a splash of water, then add to the peas with sliced spring onion, chopped chilli, lime juice and salt | Blend together | Season to taste
Make the sesame salt | Toast the sesame seeds in a dry frying pan for 5 minutes until golden and fragrant | Grind in a pestle and mortar, then stir through the salt
Serve | Spread the miso peas over sourdough and sprinkle with sesame salt – done!
