Homemade Banana, Dark Chocolate & Sunflower Seed Soft Bites

1 cup rolled oats (ground into oat flour)
½ cup whole wheat flour (or almond flour for GF)
½ tsp baking soda
½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
1 medium ripe banana, mashed
¼ cup honey or maple syrup (natural sweetener)
2 Tbsp coconut oil (or butter, melted)
1 tsp vanilla extract
¼ cup sunflower seeds (hulled, unsalted)
¼ cup dark chocolate chips/chunks
Optional: 2 Tbsp ground flaxseed or chia seeds for extra nutrition.

Instructions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowi, whisk together the oat flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.
3. In another bowl, mash the banana and mix in honey/maple syrup, melted coconut oil, and vanilla.
4. Stir the wet mixture into the dry ingredients until combined (dough will be sticky).
5. Fold in sunflower seeds and chocolate chips.
6. Scoop small bite-sized portions (about 1 Tbsp each) onto the baking sheet.
7. Bake for 8-10 minutes, until edges are set but centers are still soft.
8. Let cool completely - they firm up as they sit. Store in an airtight container.
