What You'll Need

1 pound ground beef

1 package empanada dough discs (10–12 count)

1 medium onion, finely chopped

1 red bell pepper, finely chopped

1/2 cup green olives, chopped

1/2 cup raisins

1/2 cup beef broth

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon cayenne pepper (optional)

Salt and black pepper to taste

1 large egg, beaten (for egg wash)

Flour, for dusting

How to Make It

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened and fragrant.

Add the ground beef, breaking it up with a spoon, and cook until fully browned.

Stir in the red bell pepper, cumin, smoked paprika, chili powder, and cayenne pepper if using. Cook for 2 to 3 minutes.

Add the chopped olives, raisins, and beef broth. Simmer until most of the liquid has absorbed and the mixture thickens. Season with salt and pepper.

Remove from heat and stir in the fresh parsley. Let the filling cool slightly.

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

On a lightly floured surface, place a spoonful of filling in the center of each empanada disc. Fold into a half-moon and crimp the edges to seal, pressing with a fork if desired.

Brush the tops with beaten egg and bake for 20 to 25 minutes, until golden brown and flaky.

Let cool slightly before serving.
