One Pan(Try) Pasta

1 pound (455 g) spaghetti"
2 tablespoons olive oil
1 tablespoon Diamond Crystal kosher salt
6 garlic cloves, thinly sliced
4 cup (30g) capers*
1 tablespoon Calabrian chili paste*
1 cup (100 g) finely grated Par- mesan cheese" divided
1/2 cup (25 g) finely chopped fresh parsley; divided, optional
Lemon wedges, for serving, optional

Spaghetti, use bucatini
(increase the water as needed)
Capers, use finely chopped briny olives or preserved lemon
Calabrian chili paste, use 2 tea- spoons red pepper flakes Parmesan cheese, use pecorino or grana padano Parsley, use chives

METHOD
Combine the spaghetti, olive oil, salt, garlic, capers, chili paste, and 6 cups (1.4 L) water in a large pot and bring to a boil over high heat. Cook, stirring often, until the pasta is cooked through and the water has reduced into a smooth sauce, 9 to 11 minutes. If the contents of the pot begin to look dry, add more water, 4 cup (60 ml) at a time as needed, to form a smooth sauce.
Remove the pot from the heat, add most of the parsley, if using, and cheese, and stir until the sauce is thick and glossy. Transfer to a large bowl and top with remaining parsley, if using, and cheese. Serve mitn lemon wedges for squeezing over, if desired.

to have a full-blown pasta dinner that was actually good? Well, it is. and ['ve been using that technique for my lazy one-pot pasta dinners ever since. There are endless combinations of ingredients, but this one han- pens to be my favorite. It relies heavily on pantry staples and reuirod very minimal cutting board time (no onions, yay!).
