Creamy Cajun Sausage & Shrimp Orzo

1 lb shrimp, peeled, deveined & tails removed

Garlic powder

Cajun seasoning

Lemon pepper seasoning

1 tbsp olive oil

1 lb andouille sausage, sliced

1 tbsp butter

1 whole onion, diced

2 cups orzo

1 tbsp minced garlic

1 (8oz) can tomato sauce

3 cups chicken broth

1 cup heavy cream

1 tsp salt

1 tsp black pepper

1 tsp onion powder

1 tsp garlic powder

1 tbsp Cajun seasoning

½ tbsp lemon pepper seasoning

1 tbsp Italian seasoning

A couple handfuls of fresh spinach

1 cup grated Parmesan cheese

Season the shrimp with garlic powder, Cajun seasoning, and lemon pepper.

Heat olive oil in a large skillet over medium-high heat. Cook shrimp for about 3-4 minutes total, just until cooked through. Remove and set aside.

Add the andouille sausage and cook for about 5 minutes until browned. Remove and set aside.

Add butter and diced onion to the skillet. Cook for about 2 minutes until the onion begins to soften and become translucent.

Stir in the orzo and toast for 3-4 minutes. Add minced garlic and cook for 30 seconds.

Pour in the tomato sauce, chicken broth, and heavy cream. Stir well to break up any clumps.

Season with salt, pepper, onion powder, garlic powder, Cajun seasoning, lemon pepper, and Italian seasoning.

Bring to a gentle simmer and cook for 10-12 minutes, stirring occasionally, until the orzo is tender.

Add the spinach and stir until wilted.

Return the shrimp and sausage to the skillet and mix everything together.

Stir in the Parmesan cheese until creamy and melted.
