Orange Rolls

1 Package Active Dry Yeast

½ Cup Warm Water (105 to 115 deg.)

½ Cup Lukewarm Milk (Scaled, then cooled)

1/3 Cup Sugar

1/3 Cup Shortening or Margarine or Butter, Softened

1 Teaspoon Salt

1 Egg

3 ½ to 4 Cups Bread Flour

Orange Roll Glaze

3 Cups Confectionary Sugar

6 Tablespoons Butter, Softened

4 Tablespoons Orange Juice

Dissolve yeast in warm water in 2 ½ quart bowl. Stir in milk, sugar, shortening, salt, egg and 2 cups of the flour. Beat until smooth. Stir in enough remaining flour to make dough easy to handle. Turn onto lightly floured surface; knead until smooth and elastic, about 5 minutes. (I use a Kitchen Aid with a dough hook attachment and knead for 5 minutes.) Place in greased 2 ½-quart bowl; turn greased side up. Cover. Let rise in a warm please until double, about 1 ½ hours. (Dough is ready if indentation remains when touched.) Punch down dough.

Mix all ingredients of Orange Glaze in a separate bowl until smooth.

Flatten dough with hands or rolling pin into two rectangles, 12x17 inches each, on lightly floured serface; spread each rectangle with ¼ of the orange mixture. Roll up tightly, beginning at the 12-inch side. Pinch edge of dough into roll to seal well. Stretch roll to make even. Cut into 24 1-inch slices. Place slightly apart in greased round pans, 8x1 ½ inches, 12 rolls to a pan. Let rise until double, about 40 minutes.

Heat oven to 375 degrees. Bake until golden brown, 20 to 25 minutes. Frost with remaining orange mixture while warm.

Every Christmas morning, the family would wake up to warm orange rolls. It was a tradition to bake the rolls on Christmas Eve, and the last thing Mike and I would do before retiring to bed was to sample a couple of the rolls. Yummmmm.
