Khao Soi Recipe

1 + 5 TBSP oil
1 onion
8 cloves garlic
2 Birds Eye chilli (optional)
1 tsp ginger
3 heaping TBSP Thai red chilli paste
1 can coconut milk
1 ½ cups chicken stock
4 chicken breasts
250g fine egg noodles
2 TBSP fish sauce
2 TBSP brown sugar
1 lime
Fresh coriander
Thinly sliced red onion

Add 1 TBSP oil to a large pot then add onion, chilli, garlic and ginger. Cook for 2 minutes then add the curry paste and cook for another 2-3 minutes
Add the coconut milk, chicken stock, fish sauce and brown sugar
Add in the chicken breasts ensuring they are fully submerged, cover with a lid and cook for 20-25 minutes until chicken is fully cooked
While the soup is cooking, cook the egg noodles according to its instructions then drain and rinse under cold water
Take a handful of noodles and dry with a paper towel, then add to a small pan with 5TBSP oil on high heat. Cook until noodles are brown and crispy then set aside
Remove the chicken from the soup once done and slice
Taste the soup and add a squeeze of lime and more fish sauce and brown sugar if needed
Pour the soup over the noodles and chicken in a bowl, garnish with red onions, coriander, crispy noodles
